Honey & Thyme Carrots

Been enticed into spending too much on some heritage carrots at your local farmers market? Treat them to a bathe in the sous vide.

Turnips

Turnips are a humble, peppery root vegetable. To emphasize their pepperiness & create a special veggie side dish use your sous vide.

Puréed Potatoes

Make more than you think you’ll need because you’ll be spooning this straight into your mouth from the blender. It’s so god. damn. delicious.

Saffron Potatoes

This recipe works with any aromatics you like (rosemary & butter is a good’un) but I’ve gone with Saffron & Ghee for subtle earthy flavours that pairs beautifully with fish or a curry.

Mushrooms

For a very juicy, rich mushroom-ey flavour without any shrinkage. This is a perfect veggie alternative to a steak.

Dice it, mash it or grill it like a steak - one sous vide fits all.

Roast Garlic Oil

A very simple recipe for an infused oil that works well in salad dressings & marinades. You are also going to want to roast extra garlic as these come in handy…trust me.
